Preheat oven to 400 degrees Fahrenheit
Peel carrots and parsnips and chop them to approx 1/4 inch "cubes" (could be larger, just increase cooking time)
Put carrots and parsnips in roaster and drizzle with oil and salt
Toss to combine
Cook in oven for 30-40 minutes, stirring every 10-15 minutes
Toss vegetables with honey and rosemary
Cook in oven for 10 more minutes (optional)
