Roasted Turnips and Radishes with Herby Green Sauce

Equipment

  • cutting board
  • knife
  • oven
  • Baking sheet
  • Measuring cups and spoons

Ingredients

  • 16 oz radishes about 16-18 radishes
  • 3 turnips about 2-3 inches in diameter
  • 1 tbsp oil I use canola oil but use whichever oil you prefer
  • salt to taste
  • 1 green onion garnish and to taste

sauce

  • 1/8 cup mayo
  • 1/2 tbsp honey
  • 1/2 tsp thyme
  • 1/4 tsp sage
  • pinch ground black peppper to taste

Instructions

  • heat oven to 400 degrees Fahrenheit
  • peel turnips if needed/preferred
  • cut off the root and stem ends of the radishes and turnips
  • dice radishes and turnips into approximately 1/2" - 1" pieces (cooking time will vary depending on size)
  • toss with 1 tbsp oil
  • spread out on baking sheet
  • roast in oven for 20-30 minutes, flipping every 10 minutes
  • sprinkle salt over cooked vegetables
  • cut green onion thinly and sprinkle on cooked vegetables

make herby green sauce

  • mix together mayo, honey, thyme, sage and black pepper
  • serve sauce on the side or drizzle on top
